2. Covered with a prepared seasoning and let stand one to two hours until the flavors mingle.

CASSAVA BIBINGKA

4 c. grated cassava
2 c. coconut milk
2 tbsp. melted butter
3 eggs
2 c. sugar
1 tbsp. salt
1/2 c. pure coconut cream
Grated cheese
Method
Beat eggs. Add sugar, butter and salt. Mix thoroughly. Add the grated cassava and coconut milk. Mix well and place in a pan or bibingka mold lined with banana leaf. Bake until almost done. Brush with coconut cream. Sprinkle with grated cheese or strips of local cottage cheese. Brown top under hot cover or oven broiler, or top with pure coconut milk with sugar to taste and brown under broiler.

MUSHROOM PHYLLO TARTS

3/4 c. dairy sour cream
1 (3 oz.) pkg. cream cheese, softened
1/4 c. dry bread crumbs
1 tbsp. dried dill weed
1/2 tsp. salt
1-2 tbsp. lemon juice
1 (4.5 oz.) jar Green Giant sliced
mushrooms, drained
1 garlic clove, minced
1/2 c. butter or margarine
8 (18 x 14 inch) frozen phyllo pastry
sheets, thawed
1 (4.5 oz.) jar Green Giant whole
mushrooms, drained
Method
Heat oven to 350 degrees. In small bowl, combine sour cream, cream cheese, bread crumbs, dill weed, salt and lemon juice; blend well. Stir in sliced mushrooms. Set aside. To make garlic butter, in small skillet over low heat, cook garlic in butter until tender, stirring constantly. Coat 16 muffin cups with garlic butter. Set aside. Brush large cookie sheet with garlic butter. Unroll phyllo sheets; cover with plastic wrap or towel. Brush one phyllo sheet lightly with garlic butter; place on buttered cookie sheet. Brush second phyllo sheet lightly with garlic butter; place on top of first buttered sheet. Repeat with remaining phyllo sheets. With sharp knife, cut through all layers of phyllo sheets to make 16 rectangles. Lightly press each rectangle into garlic buttered muffin cup. Spoon heaping tablespoonful sour cream mixture into each cup. Top each with whole mushroom, pushing stem into filling. Drizzle with remaining garlic butter. Bake at 350 degrees for 18-20 minutes or until light golden brown. 16 appetizers.

BARBEQUED CHICKEN
--MARINADE:--
1 pcs onion
2 spoon ground mustard
1 lg. garlic clove, crushed
1 tsp. salt
1/2 tsp. freshly ground pepper
1 tbsp. oil
3 tbsp. lemon juice
Put ingredients in a heavy ziplock bag. Shake to coat well. Refrigerate for 24 hours if possible, turning the bag several times. When coals are ready, place chicken on the grill, skin side up, basting with the marinade. Cook until well browned before turning. (If baked in oven, bake at 400 degrees, skin side down first.) About 20 minutes before chicken is done, begin using your favorite bottled barbeque sauce or the homemade version on back of card. Serves 4.
--BARBEQUE SAUCE--
1/4 c. cider vinegar
2 1/4 c. water
3/4 c. sugar
1 stick butter or margarine
1/3 c. yellow mustard
2 onions, coarsely chopped
1/2 tsp. each salt & pepper
Bring to a boil, cook on low 20 minutes or until onion is tender.
1/2 c. Worcestershire
2 1/2 c. catsup
6-8 tbsp. lemon juice
Cayenne pepper to taste
Simmer slowly for 45 minutes. Taste for seasoning. This sauce freezes well.

Rub 9x13 glass dish with garlic. Sprinkle salt on bottom of dish. Put 1/2 package French fries in dish. Combine margarine, flour, cheese and seasonings. Heat milk and pour into cheese mixture. Pour one-half cheese mixture over potatoes. Repeat with remaining sauce and potatoes. Bake in 350 degree oven for 30 minutes.

GUACAMOLE
Ingredient
2 lg. ripe avocados
1 sm. chopped tomato

Method
Cut avocados in half lengthwise. Pry out pits with point of knife. Peel and cut avocados into small pieces. Mash avocados with fork. Blend in other ingredients. Serve with tortilla chips or raw vegetables.

Method
Mix first 5 ingredients together and heat until the cheese melts. Add the boned chicken or turkey. Stir and set aside. Line a casserole dish (9x11-inches) with Doritos on the bottom and along the side. Pour the mixture on top. Generously add the grated cheese on top. Bake at 325 degrees for 20-30 minutes.

Beef Shabu Shabu
Shabu shabu is a Japanese hot pot similar to sukiyaki. Basically, thinly sliced meat and other ingredients are cooked in a skillet at the table. Meat for shabu shabu is thinner than that for sukiyaki. If it's possible, ask a butcher to slice the tender part of beef into paper-thin slices. Diners swish a slice of meat in the boiling dashi soup, like having it swim in the soup. It's said that the name, shabu shabu, came from this swishing action. Ingredients:
• 3 inches dried kombu (kelp)
• 1 lb. hakusai (Chinese cabbage), chopped
• 1/4 lb. negi, diagonally and thinly sliced
• 1 block cotton tofu, cut into bite-size pieces
• 1 enoki mushroom, cut in half
• 1/4 lb. carrot, cut into thin round slices
• 1 1/2 lb. sirloin beef, very thinly sliced
• sesame dipping sauce
Preparation:
Fill a deep electric pan or a medium skillet two-thirds full with water. Soak kombu in the water for at least 30 minutes. Arrange the ingredients on a large plate. Set the electric pan, ingredients, and serving bowls with dipping sauce at the table. Heat the water and remove the kombu just before the water comes to a boil. Put a slice of beef in the boiling soup and swish it gently back and forth in the boiling soup until it changes color. Eat the meat, dipping in the sauce. Skim off any foam or impurities (aku) that rise to the surface as you repeat cooking and eating meat. Add other ingredients in the boiling soup and simmer for a few minutes. Eat them dipping in the sauce as well.

3/4 c. sugar
1/2 tsp. almond flavoring

Bake 20 minutes at 350 degrees in a 15 1/2 x 10 1/2 x 1 inch pan. Divide into thirds and tear into bite-size pieces. --RASPBERRY SAUCE:--

Add water to make 1 1/2 cups liquid. 1/4 c. sugar

Scrub clams with stiff brush under cold water until all grit is removed. Saute onion and garlic until golden. Remove clams from shell (steam open). Combine biscuit mix, cornmeal, egg and sugar. Add enough milk to make it batter consistency. Coat hot dogs well in batter and fry in 2 inches hot oil.

BAKED BEANS
Ingredient
1 lb. great northern beans
1 tsp. mustard
1 tsp. salt
1 tsp. onion powder
3 tbsp. ketchup
3 tbsp. molasses
1/2 c. brown sugar

1/4 lb. salt pork
1/4 tsp. baking soda
Method
Soak beans overnight. Start beans in cold water with 1/4 teaspoon baking soda. Boil and pour off all water. Add fresh water to cover, cook until tender with salt. Add rest of ingredients except salt pork. Cook salt pork until tender and add to beans. Also add a few tablespoons of fat from pork - cook at 325 degrees for 2 hours, if dry add a little more water. Serves 8-10

SAVORY RISOTTO

1/4 c. chopped bell pepper

1/2 c. dry white wine

Method
Saute onion, celery and green pepper in margarine in saucepan for 5 minutes. Add rice and continue to cook while stirring until rice becomes transparent. Stir in wine, broth, salt and thyme; bring to simmer; boil. Add lid to pot, simmer on lowest 30 minutes, or until rice is done.

Method
Roll out bread dough (approximately 12 x 12 inches). Mix and spread on dough: spinach, oil, Parmesan cheese, garlic powder, salt and pepper. Layer on spinach mixture: pepperoni, boiled ham, Mozzarella cheese. Roll lengthwise, place seam down on greased cookie sheet. Brush top with 1 egg mixed with 2 tablespoons water. Rise 15 to 30 minutes. Make diagonal slashes on top of roll, not cutting through the dough. Bake at 350 degrees for 40 minutes.

Split crescent rolls in half. Wrap rolls around cheese. Seal cheese tightly. Beat egg white (you can cheat and use the whole egg) and brush over the top of the rolls. Bake according to roll recipe (usually 375 degrees for 11 to 13 minutes, until crust is golden. Cheese may run if not fully sealed.) Let everyone cut into wedges. Don't forget to take the cheese out of the wax coating! The nice thing with Edam and Gouda is that they come in various flavors, smoked, with caraway seeds to name two, and this gives you more variation.

Keep warm until ready to serve. Corn Bread Pancakes: Combine cornmeal, flour, sugar, baking power and salt in bowl. Cut in shortening. Mix eggs and milk together and add dry ingredients until batter is smooth. Pour about 3 tablespoons on hot greased griddle for each cake. Bake until bubbles break over surface, turn and brown other side. Serve shredded pork between pancakes with lettuce and additional barbecue sauce.

1 pt. fresh blueberries, rinsed,
drained and divided, about 16 oz.
Method
Serves 4. About 2/3 cup per serving. Dissolve gelatin in boiling water, stirring until crystals disappear. In a blender or the workbowl of a food processor fitted with a metal blade, blend dissolved gelatin, tofu, apple juice concentrate, vanilla, brown sugar, cinnamon and 1 cup of blueberries until smooth. Pour pudding into a bowl; fold in remaining cup of blueberries. Cover with plastic wrap and refrigerate for 4 hours, or until set. Serve cold. The sweetener in this recipe is apple juice concentrate. That's a good way to cut down on processed sugar.

CRABMEAT CASSEROLE
Ingredient
1 (8 oz.) can crabmeat
1 c. mayonnaise
1 c. Pepperidge Farm herb stuffing mix
1 onion, chopped
1 c. light cream
Cayenne pepper to taste
Extra stuffing mix for top of
casserole
Parmesan cheese
Method
Mix everything together and top with extra stuffing mix and Parmesan cheese. Bake in small casserole dish in a 350 degree oven for 30 minutes. Serve warm with crackers. Serves 6.

CRISPIX SNACK MIX
Ingredien
1 lg. box Crispix cereal
1 c. powdered sugar
1 stick margarine
2/3 c. peanut butter
9 oz. milk chocolate
9 oz. semi-sweet chocolate chips
Method
Put chocolate chips, milk chocolate, peanut butter and margarine in a bowl. Melt in microwave for 2-3 minutes (stir after 1 minute). Just melt for long enough to soften ingredients so they can be easily stirred and mixed together. Pour 1/2 Crispix into a large bowl, then pour 1/2 of above mixture over the Crispix and stir together. Repeat with the other 1/2 of Crispix and mixture. Pour powdered sugar over the top and mix all together (the powdered sugar makes it easier to break into small bite-size pieces.)

4 halves skinned & boned chicken
breasts
2 c. half & half
1 1/2 c. mayonnaise
3 tbsp. mango chutney
2 tbsp. dry sherry
1 tbsp. sherry vinegar
2 tbsp. plus 1 tsp. curry powder
1 tsp. turmeric
2 c. finely chopped salted roasted
peanuts
Method
Preheat oven to 350 degrees. Place chicken breasts in a shallow baking dish just large enough to hold them. Pour half and half over them and bake for 30 minutes. Let cool and cut in 1 inch cubes. Process mayonnaise, chutney, sherry, vinegar, curry powder and turmeric in a blender or food processor. Dip chicken pieces into the curry mayonnaise and roll in the chopped nuts. Refrigerate 30 minutes. Arrange on a serving plate with fancy toothpicks.

Method
To cook eggplant: Roast on BBQ grill until the skin of the eggplant is brittle, turning occasionally to insure that it cooks thoroughly. Once cooked, let it cool, then peel. Scrape all insides into a bowl and set aside. Discard the skin. (If you do not have access to a BBQ grill, you can boil the eggplant for 25 minutes.) In a large skillet, brown the onion and green pepper in the olive oil. Add eggplant and tomato and stir often. Cook until the mixture is well done. Add more oil if it begins to stick. Salt and pepper to taste. Once the mixture is cooked, put it in a serving dish and chill. Serve as a spread for pumpernickel bread, French bread or crackers.

1 can white crab meat
1 jar Old English cheese spread
1/2 tsp. mayonnaise
1 stick margarine, softened
1/2 tsp. garlic salt

6 English muffins, split
Method
Mix together all ingredients, except muffins, adding the crab meat last. Spread on the English muffin halves. Put in freezer 45 minutes. Take out and cut in 4ths. You may put these in freezer bags after cutting and pop in the oven when unexpected guests arrive. May also serve these whole with soup. Cook for 10 minutes at 450 degrees.

1 c. finely chopped pecans
2 c. diced cooked chicken or turkey
8 oz. cream cheese, cut into chunks &

6 tbsp. mayonnaise

Method
Combine chicken, cream cheese and garlic with chopped pecans in food processor or blender and blend just until smooth. Add mayonnaise, dill and salt to taste and blend again. Form into a ball and arrange on a bed of lettuce. Sprinkle with additional dill. Serve with crackers.

WATER CHESTNUT WRAPPED WITH BACON
Ingredient
1 lb. bacon
4 cans whole water chestnuts
1/4 c. soy sauce
1/2 c. brown sugar
Method
Cut bacon in thirds. Wrap a strip of bacon around a water chestnut and poke a flat toothpick through the bacon and water chestnut. Continue wrapping water chestnuts with bacon until finished. Place each water chestnut that has been wrapped on broiler pan. Cook until bacon is crisp. Mix soy sauce and brown sugar together in bowl. Place each water chestnut with bacon in sauce and marinate for a couple of seconds. Serve hot. Serves 10.

4 oz. sharp Cheddar cheese, finely

1/3 c. pecans, finely chopped

Mix everything except pecans. Chill several hours or overnight. Spread chopped pecans on waxed paper and roll the cheese ball on it until coated. Chill completely before serving.

FETTUCCINE WITH SHELLFISH, TOMATOES, OLIVES

Add shrimp and scallops and saute until cooked through about 2 to 3 minutes. Meanwhile, cook pasta in large pot, until al dente drain and transfer pasta to bowl. Toss with 2 tablespoons oil. Add pasta to seafood mixture and toss to heat through. Serve.

Cream sugar and melted shortening. Blend in eggs and molasses. Sift flour with spices, soda, and baking powder. Add to creamed mixture. Finally add the boiling water. Beat well. Pour into 9x13 inch greased pan. Bake for 30 minutes at 350 degrees.

SALMON MOUSSE WITH CUCUMBER VINAIGRETTE
Ingredient
1/2 c. dry Vermouth
1 env. unflavored gelatin
1 c. smoked salmon, flaked
3 hard-cooked eggs, mashed
3/4 c. sour cream
1/2 c. sliced green onions
1/4 c. fresh parsley, chopped fine
3 tbsp. mayonnaise
1 tsp. prepared horseradish
1 tbsp. lemon juice
1 tsp. finely chopped onion
Combine gelatin and dry Vermouth. Heat gently until dissolved, and set aside to cool. Combine all other ingredients into gelatin mix, blending well. Pour into a 2-cup flat-bottom mold. Chill at least 3 hours or overnight.

sliced (about 2 c.)

strips (about 1 c.)
1/4 c. vinegar
1/4 c. lemon juice

To unmold mousse: Run a spatula around edge of mold; invert onto vegetables. Serve at once, with crackers as appetizer or as salad on bed of lettuce.

Add milk, stirring. cook for 3 minutes until thickened. Add most the of the cheese. Let melt. Season to taste with salt, pepper and nutmeg. Pour half the sauce in bottom of an ovenproof casserole. 1/2 lb. tubettini or ditalini macaroni
Method
In medium saucepan saute onion and garlic in olive oil. Add crushed tomatoes, water, parsley and basil and stir. Cover. Place on high heat until boiling. Reduce heat and simmer for 30 minutes. HEART HEALTHY GARDEN PASTA MARINARA
Ingredient
3 c. coarsely chopped fresh plum
tomatoes
1 qt. prepared marinara sauce (select
one with less than 2 grams fat per
4 oz. serving)
2 tbsp. chopped fresh basil or 1 tsp.

1 med. zucchini squash
1 med. yellow squash
1 med. red pepper
1 med. green pepper
1 lb. thin spaghetti or linguine,
uncooked
1 tbsp. olive oil
Fresh grated Parmesan cheese
Method
Combine the plum tomatoes and the prepared marinara sauce in a saucepan and place over medium heat. When almost to the boiling point reduce heat, cover and simmer for 20 minutes. Remove the cover, stir in the basil and continue to simmer about 15 to 20 additional minutes, until ready to serve. Wash vegetables. Cut squash in half lengthwise and then into thin slices. Core peppers and cut into 1/2" cubes. (Other fresh vegetables may be substituted.) Prepare pasta according to package directions. While pasta is cooking heat olive oil in a large skillet. Add the vegetables and stir fry until tender crisp. Drain pasta and combine with the cooked vegetables. Serve the vegetable pasta mixture with the marinara sauce and Parmesan cheese. Miso Soup with Tofu
Miso soup is the most popular soup in Japan. Typical Japanese-style meals include a bowl of miso soup. As miso varies in saltiness, adjust the amount of miso to your preference.
Ingredients: 4
• 3 cups dashi soup stock
• 1 block tofu
• 3-4 Tbsps miso paste
• 1/4 cup chopped green onion
Preparation:
Put dashi soup stock in a pan and bring to a boil. Cut tofu into small cubes and add them to the soup. Simmer the tofu for a few minutes on low heat. Scoop out some soup stock from the pan and dissolve miso in it. Gradually return the miso mixture in the soup. Stir the soup gently. Stop the heat and add chopped green onion. Try not to boil the soup after you put miso in.

BROWNIE BITES
Ingredient
12 tbsp. flour
6 tbsp. cocoa
1/2 tsp. baking powder
1/2 tsp. salt
1 egg
3 egg whites
1 c. sugar (divided)
12 tsp. margarine
Method
Spray 8 inch square pan with Pam. In medium bowl, combine flour, cocoa, baking powder and salt. In a large bowl with mixer on high, beat egg and egg whites until foamy. Add 1/2 cup sugar and beat for 1 minute. Add remaining 1/2 cup sugar. Beat until slightly thickened. Beat in margarine (melted). Gradually stir in flour mixture just until evenly moistened. Pour into prepared pan. Bake in 350 degree oven for 20 to 25 minutes or until edges pull away from sides of pan. (Do not over bake). Cool completely. Cut into 2 x 2 inch bars. Makes 32.

Sausage-Cheese Balls
These little appetizers make a big hit with any crowd.
Ingredients
• 3 cups Original Bisquick mix
• 1 pound bulk pork sausage
• 4 cups shredded Cheddar cheese (16 ounces)
• 1/2 cup grated Parmesan cheese
• 1/2 cup milk
• 1/2 teaspoon dried rosemary leaves, crushed
• 1 1/2 teaspoons chopped fresh parsley or 1/2 teaspoon parsley flakes
• Barbecue sauce or chili sauce, if desired
Method
1. Heat oven to 350ºF. Lightly grease bottom and sides of jelly roll pan.
2. Stir together all ingredients, using hands or spoon. Shape mixture into 1-inch balls. Place in pan.
3. Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm with sauce for dipping.

Ingredients
1 cup barbecue sauce
1/2 cup (from 9.2-ounce jar) cranberry-orange sauce
1/2 teaspoon ground mustard
1/2 teaspoon ground ginger
1/2 teaspoon salt
2 packages (16 ounces each) frozen meatballs, thawed
2 tablespoons chopped fresh parsley
Directions
1. Mix all ingredients except meatballs and parsley in 2- to 2 1/2-quart slow cooker until well blended. Add cold meatballs.
2. Cover and cook on low heat setting 2 to 3 hours or until thoroughly heated. Stir in parsley.
3. Serve meatballs with cocktail forks or toothpicks. Meatballs will hold on low heat setting up to 2 hours; stir occasionally.

- 1/4 cup Worcestershire sauce

- 1/2 teaspoon hot sauce
- 2 tablespoons minced garlic

- 8 skinned, boned duck breast halves
Directions
- Stir together the Worcestershire sauce, olive oil, hot sauce, garlic, and pepper. Add the duck breasts, and toss well to coat. Cover, and marinate in the refrigerator for at least 30 minutes to overnight.
- Preheat a grill for medium-high heat.

- Tie a string on to the middle so you can hold the duck and hang it up.
- Bring 6 cups of water to boil in a wok.
- Add maltose or honey and stir to dissolve.
- Add sherry and vinegar.
- Make a slurry out of the cornstarch and add to wok.
- When liquid returns to a boil, dip the duck into liquid and spoon liquid over duck.
- Repeat until duck is thoroughly moistened.
- Repeat dunking once more.
- Hang duck by string in a cool airy place with a bowl underneath to catch drips.
- Leave for 4-6 hours until skin is dry and taught.
- Put roasting pan on lower oven rack and fill with 2-3 inches of water.
- Oil rack above pan.
- Preheat oven to 350.
- Remove chopstick and string.
- Put duck on oiled rack in center of oven breast side up.
- Cook 30 minutes.
- Turn duck breast down for 45 minutes.
- Turn breast up for 30 minutes or until skin is dark brown.
- While duck is cooking make scallion brushes.
- Trim roots,cut off most of green part, leaving a 3 inch piece.
- Make several 1 inch lengthwise slits in each end of scallion, put in ice water for 20 minutes, drain and refrigerate.
- Carve duck and separate meat and skin.
- Mix hoisin with sesame oil and 1 tbl water.
- To serve: use scallion brushes to wipe hoisin mixture on to pancakes, add duck skin and meat and scallion, fold one end over and roll up
